No desi meal seems complete without some raita, chutney or pickle to pair with. These side dishes not only complement the rice, roti or paratha that we are eating, but also help cleanse the palate during a meal. And when it is about pairing with biryani, then first thing that comes to our mind is salan. A designated side dish for biryani across India, salan is an Urdu word that stands for curry. Here, chilli is the main ingredient that is dunked in yogurt-based gravy made with a pool of spices.
Adding some variation to this traditional dish, we bring you a unique salan recipe that includes bhindi (okra) in place of mirchi (chillies). Bhindi ka salan comprises crispy fried okra with thick spicy gravy made with curd, onion, ginger, garlic, fennel seeds, mace powder etc.
You may pair it with paratha and make your meal a delicious affair!
Here’s The Written Recipe Of Bhindi Ka Salan:
Half cup curd
2 tsp ginger-garlic paste
Half tsp cardamom powder
Half tsp fennel seeds
1/4 tsp turmeric powder
Half tsp coriander powder
Half tsp white pepper powder
Half tsp cumin powder
Salt, as per taste
One pinch mace powder
Add white pepper, coriander powder, turmeric powder and cumin powder in curd and whisk well. Keep aside.
Boil water with some salt and add the onions to it. Boil for 5 minutes.
Grind the onions into smooth paste. Keep aside.
Heat oil in a pan and fry the bhindi till it turns crispy. Transfer the bhindis to a plate.
Add ginger-garlic paste in the same kadhai and fry till it starts releasing aroma.
Add the onion paste and mix.
Add the curd paste, mix and add a cup of water, cardamom powder, mace powder, fennel seeds and salt in it. Cook everything together.
Add the fried bhindis and simmer for 10 minutes.
And a bowl of spicy bhindi ka salan is ready to be served. Meal
