DESCRIPTION:
Iyengar Puliyogare is a dish from Tamil Nadu and it is quiet famous in the entire South India. As the name suggests, this dish is from the Iyengar community of Tamil Nadu. It is known as Tamarind rice in English. This is a rice dish with the combination of tamarind, coconut and a few lenticels. Very simple and quick to prepare, I will help you with this recipe to attain perfection in its preparation. Follow the steps and you will realise how readily you can prepare this delicious rice dish.
INGREDIENTS:
- cups of rice
- tablespoon channa dal
- tablespoon urad dal
- tablespoon coriander seeds
- red chillies
- medium size tomato (for garnishing)
- teaspoon sesame seeds
- teaspoon black pepper
- tablespoon oil or ghee
- curry leaves
- tablespoon dry coconut
- tablespoon ground nuts
- tablespoon tamarind juice
- tablespoon jaggery
- teaspoon turmeric powder
- pinch of asafetida
- Salt to taste
INSTRUCTIONS:
- Cook rice and keep it aside
- Dry roast the ingredients and grind to fine powder
- In a pan heat oil, add curry leaves, channa dal, and ground nuts
- After 1 minute add asafetida, turmeric powder sesame seeds, and dry coconut
- Now add jaggery grind powder, salt, and tamarind juice and turn off the stove
- Mix it well with boiled rice and serve it with ghee and garnish with sliced tomatoes
