DESCRIPTION:
Palak paneer is a delightful vegetarian North Indian dish with minimal efforts. The true main ingredients of this recipe are palak (spinach) and paneer (cottage cheese) as the recipe name suggests. Palak is very good for your health and cooks super fast. It is a rich source of various vitamins, iron, calcium, etc. Paneer is an Indian form of non-aged cheese and together they make a great combination. It a leaf based curry (saag) cooked in the sauce of palak and spices
INGREDIENTS:
- 300 gm spinach
- 200 gm paneer
- 1 onion
- 1 tomato
- 4-5 cloves of garlic
- 1 inch ginger
- 2-3 green chillies
- 2 tablespoon butter/ghee
- 1 bay leaf
- 1 teaspoon cumin seeds
- 1 teaspoon garam masala
- 1 teaspoon coriander powder
- A pinch of turmeric powder
- Salt to taste
- 1 tablespoon cream for garnishing (optional)
- 4 tbsp oil
INSTRUCTIONS:
- Wash and boil the spinach leaves with a little salt
- Meanwhile chop the onion, tomato, chillies, and cut the paneer into cubes
- Shallow fry the paneer cubes
- Remove the leaves form water and keep in ice cold water to retain its green colour
- Next step is to drain the water and then make puree of the spinach leaves with 2 garlic cloves
- Keep the puree aside and heat a kadai or pan to prepare the curry
- Now make a spice paste with ginger, chillies, and remaining garlic
- Pour ghee or add butter to melt
- Now add the bay leaf, cumin seeds, chopped onion and fry till gets almost cooked
- At this point add tomatoes and fry for a few minutes
- Now add the spice paste, powders, and salt
- Add the spinach puree and let it cook for a minute and add the paneer cubes
- Add a little water and cook on low heat for a few minutes
- Remove from the heat, garnish with cream and serve hot with roti, chapatti, naan or kulcha
